Yes, this post is more than a little bit off-topic …. but great for a cold day!

Cuban Black Bean Soup

Ingredients

1 lbs. of Black Beans
1 Large Onion, chopped
2 Medium cloves of garlic, chopped
2-4 Hot chili peppers (serrano), finely chopped
1 Green pepper, chopped
3 tablespoons of olive oil
6 whole cloves
1/2 teaspoon of ground cumin
3 vegitable boullion cubes
2 tablespoons of lemon juice
green onions, chopped for garnish
sour cream

Directions

1) Cook beans until they are soft

2) Saute onion, garlic, chili peppers, and green peppers in olive oil with cloves and cumin until onion is browned

3) Add some bean broth to vegitables and dissolve the bouillon cubes.

4) Add lemon juice to vegitables

5) Mash some of the beans and pour the skillet of vegitables into the pot of beans.

6) Bring to a boil, then simmer 10 minutes. Add water to desired thickness. Remove cloves.

7) Serve in bowl, top with spoonful of sour cream, sprinkle chopped green onions to garnish.
